New purpose
So you may have noticed the downturn in my posting frequency on this here blog (or not). I started this site to share my experience while I was in the UK for grad school, and now that I’m back working in the States, I haven’t really figured out what to do with it. I have continued to document the exhibitions I see, though now with far shorter lists of shows and with greater lapses between posts. However, I remembered tonight that over the course of two years this also became my occasional food blog. The reason I remembered is what I want to share here now.
I don’t have any pictures, because I ate it so quickly, but I made a great soup tonight. I think I have made soup from scratch once or twice ever in my life, and I recall those few occasions being extremely time-consuming. Not the case tonight though. I had some things on hand that I threw into a saucepan and fifteen minutes later ate out of a bowl and accompanied with some toasted sourdough bread:
- Chicken broth
- Acini di pepe
- Spinach
- Pepperoni
- Cheddar cheese
- Salt and fresh ground pepper
In the end it was like a modified ribollita, tasty, easy and filling.
(I realize cheddar cheese and pepperoni in a soup sound a little gross, but both were minced up and used sparingly, just for a little extra taste and texture.)
